Add Languages & Reference, History & Culture, Children & Family, Trades & Vocational, and Entertainment categories to the Kiwix collections system with three tiers each (Essential/Standard/Comprehensive). All ZIM file URLs verified against the Kiwix download catalog. Update CATEGORIES-TODO.md to reflect completed categories.
