Danny Martini 6197dae4b6 feat(engine): Default a workflow with no engineType to the instance's engine ... Engine 2.0 was opt-in per workflow only, so pointing a whole instance at it meant editing every workflow's settings. `N8N_ENGINE_DEFAULT_ENGINE_TYPE` supplies the engine for a workflow that names none; a workflow that names one still keeps it.
